Healthy Recipe #2: Oven-Roasted Fries
In the post Fat City we promised a recipe for oven-roasted potatoes you can use to replace French fries. (Restaurant fries are laden with unhealthy oils, including trans fats. You can fry potatoes at home using healthy oils, but roasting potatoes is easier and better for you.) Experiment with other starchy vegetables like sweet potatoes. Feeds three to four people.
Ingredients:
1/8 cup extra virgin olive oil
1 teaspoon minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
4 large Yukon Gold potatoes, or potato of your choice
Kosher salt and freshly ground pepper
Directions:
In a large bowl, combine oil and spices (except salt and pepper). Wash the potatoes and cut into wedges, leaving the skins on. (Thinner wedges are crispier and cook faster.) Add wedges to the bowl and coat evenly. Arrange on a foil lined baking sheet, add salt and pepper to taste.
Roast for 30-40 minutes at 425 degrees, flipping the potatoes after 20 minutes to brown on both sides.
Health note: Potatoes are avoided by some due to their high glycemic index, which can raise blood sugar. Combining them with olive oil slows down metabolism and smoothes the sugar spike. The spices are both flavorful and rich in antioxidants.

I love the website/blog so far. And I love the recipe for these potatoes. We often make oven-roasted potatoes (I love to use Sweet potatoes), and my family has come to prefer them. They aren't so greasy and fatty. And with all of the herbs they have actual flavor. (You don't need tons of ketchup).
Anyways, great site. I'll be checking back here often. I love the idea of 52 positive changes, and I totally agree that we need to be spending time concentrating on the rest of the word of wisdom (rather than the "no smoking/drinking" part.

I love making roasted potatoes; they're a stand-by dish that we always seem to have everything for. I use Herbes de Provence to season mine. It's so good and takes literally a second or two to shake it on.
My family loves oven baked "fries"...I often make them with sweet and regular potatoes following a very similar methodology. We have fun experimenting with spices and herbs. One of our favorite mixes on sweet potatoes is cinnamon and chili powder, in roughly equal amounts.
Yum! I do mine a similar way except instead of the spices listed I use only sea salt and a pinch of cayenne. The super high roasting temperature really does the trick. I look forward to trying them with this new spice mix!
We've been making similar fries for awhile with one slight different. We boil the potatoes until they just get soft, then we cover them with the oil and spices and then we bake them. Amazingly delicious.

We frequently make potatoes like this - I love the flavor. I have a similar recipe that we use with fish that adds lemon juice to all the seasoning - Yummy!
